Today I'm posting 2 recipes for a desserts we love to eat on Thanksgiving.

Lush Dessert

Crust:
1 cup of flour
1/2 cup butter
1/2 cup chopped pecans

Cheese Layer
8 oz cream cheese
1 cup powdered sugar
1 cup cool whip ( I always make homemade whipped cream for this)

Pudding Layer
2 3.4 oz packages instant pudding
3 cups cold milk

Topping
2-3 cups cool whip or whipped cream

Garnishes- I like to sprinkle mini chocolate chips on chocolate lush or coconut on coconut lush; you get the idea

Mix flour, butter, pecans until crumbly. Press into a 9x13 inch baking pan or you can use 2 9 inch pie plates bake for 10 minutes at 350 degrees.
While the crust is baking mix together cream cheese, sugar and whipped topping.
Spread over the cooled crumb layer
Beat pudding and milk for 2 minutes pour over the cheese layer
Refrigerate until set
Top with the rest of the whipped topping and add your garnish.
This dessert never fails to disappear!

Homemade Whipped Cream
1 pt of heavy whipping cream
Powdered or superfine sugar
1 teaspoon pure vanilla extract

It's very important that the mixing bowl and beaters are clean and chilled.
Pour the cream into the mixing bowl
Beat at high speed until desired consistency.
During the beating add the sugar to taste.
Add vanilla at the end. Enjoy!

Cranberry Salad
This is a sneaky way to get some fruit into the Thanksgiving meal

2 small boxes of jello (either raspberry or orange)
1 can of whole berry cranberry sauce smashed ( you can use a potato masher or clean hands)
1 tart apple peeled and diced up fine
1 orange sectioned ( I have used well drained mandarin oranges as well)
1 can of crushed pineapple
1/2 cup chopped walnuts

Make the jello and chill til it begins to thicken
Add the cranberries, the pineapple and the juice, the apple, orange and nuts
Chill until firm
I set this out with the meal and it never fails to disappear.
